Ingredients

4 small chicken breasts (skinless and boneless)
1 teaspoon salt
1/2 teaspoon pepper
1 teaspoon smoked paprika
6 ounces + 2 tablespoons cream cheese
1/3 cup parmesan cheese
1/3 cup feta cheese
1 cup baby spinach (chopped)
1/4 cup sun dried tomatoes (packed in oil)
1 tablespoon butter
Instructions
- Butterfly your chicken breasts by slicing them horizontally through the middle, stopping just before cutting through.
- Season the outside of the chicken with salt, pepper, and smoked paprika.
- Mix cream cheese, parmesan, feta, spinach, and sun-dried tomatoes in a small bowl.
- Stuff the chicken breasts with the cheese mixture and secure the edges with toothpicks.
- Melt butter in a skillet over medium heat.
- Brown the chicken on all sides and cook until the internal temperature reaches 165 degrees F.
Notes
- Use a digital thermometer to ensure the chicken is cooked through without becoming dry.
- Remove toothpicks before serving.
