Ingredients
1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
1 tablespoon soy sauce (for chicken marinade)
1 tablespoon cornstarch (for chicken marinade)
1 teaspoon sesame oil (for chicken marinade)
1/2 teaspoon ground ginger (for chicken marinade)
8 ounces noodles (spaghetti, linguine, or your favorite type)
4 tablespoons soy sauce (for sauce)
2 tablespoons brown sugar
2 tablespoons honey
2 tablespoons rice vinegar
4 cloves garlic, minced
1 teaspoon sesame oil (for sauce)
1/2 teaspoon red pepper flakes (optional, for heat)
1 tablespoon cornstarch
2 tablespoons water
Sesame seeds (for garnish)
Chopped green onions (for garnish)
Instructions
- Prepare the Chicken: In a bowl, combine chicken pieces with 1 tbsp soy sauce, 1 tbsp cornstarch, 1 tsp sesame oil, and ½ tsp ground ginger. Mix well and set aside for 15 mins.
- Cook the Noodles: Cook noodles as per package instructions until al dente. Reserve ½ cup pasta water before draining. Drain and set aside.
- Make the Sauce: In a bowl, whisk together 4 tbsp soy sauce, brown sugar, honey, rice vinegar, minced garlic, 1 tsp sesame oil, and red pepper flakes.
- Cook the Chicken: Heat a large skillet over medium-high heat. Add marinated chicken and cook for 5-7 minutes until browned and cooked through.
- Thicken the Sauce: Pour sauce into skillet with chicken. Simmer. Mix 1 tbsp cornstarch with 2 tbsp water to make a slurry. Add to skillet and cook 1-2 mins until thick. Add pasta water to thin if needed.
- Combine: Add cooked noodles to the skillet. Toss everything together until noodles are well coated.
- Garnish and Serve: Garnish with sesame seeds and chopped green onions. Serve immediately.

- For extra tender chicken, marinate for up to 1 hour.
- Reserved starchy pasta water is key for adjusting sauce consistency.
- Add vegetables like broccoli or bell peppers when tossing with noodles.
