Ingredients
2 boneless, skinless chicken breasts, cut into bite-sized pieces
2 medium zucchinis, sliced into half-moons
1 cup cherry tomatoes, halved
1/2 red onion, thinly sliced
2 cloves garlic, minced
2 tablespoons olive oil
1 teaspoon dried oregano
1/2 teaspoon dried basil
1/2 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon red pepper flakes (optional)
1/2 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
2 tablespoons fresh parsley, chopped
Instructions
- Preheat your oven to 375’F (190’C).
- Lightly grease a 9×13-inch baking dish with olive oil.
- In a large bowl, toss together chicken, zucchini, cherry tomatoes, red onion, and garlic with olive oil and the Mediterranean seasoning mixture.
- Spread the mixture evenly into the prepared baking dish.
- Sprinkle mozzarella and Parmesan cheese over the top.
- Cover with foil and bake for 20 minutes.
- Remove foil and bake for another 10-15 minutes until cheese is golden and chicken reaches 165’F.
- Garnish with fresh parsley and serve warm.

- For a saltier flavor, swap mozzarella for feta cheese.
