Sweet honey and tangy lime marinated chicken baked to perfection and topped with a fresh, tropical mango salsa. A vibrant, healthy, and flavor-packed main course perfect for summer.
Ingredients
2 large boneless, skinless chicken breasts (or 4 small)
2 tablespoons honey
Juice and zest of 2 limes
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon ground cumin
½ teaspoon smoked paprika
½ teaspoon salt
¼ teaspoon black pepper
1 large ripe mango, diced
¼ cup red onion, finely chopped
1 small jalapeño, seeded and minced (optional)
2 tablespoons fresh cilantro, chopped
Juice of 1 lime
Salt and pepper, to taste
Instructions
- In a bowl, whisk honey, lime juice/zest, oil, garlic, cumin, paprika, salt, and pepper. Add chicken, coat well, and marinate for 1-4 hours.
- Make salsa: Combine diced mango, red onion, jalapeño, cilantro, and lime juice. Season with salt and pepper. Refrigerate.
- Preheat oven to 400°F. Bake chicken in a dish for 20-25 mins, until internal temp reaches 165°F.
- Let chicken rest for 5 mins, slice, and serve topped with chilled mango salsa.
Notes
- Marinating is key for flavor. For a glaze, boil any reserved marinade before brushing on chicken.
- Use a ripe but firm mango. Letting the chicken rest ensures juiciness.
