Description

A vibrant and high-protein meal featuring tender honey lime marinated chicken, creamy avocado, and fresh vegetables over a fluffy rice base.


Ingredients

2 large chicken breasts (about 400g)
2 tablespoons honey
3 tablespoons fresh lime juice
1 teaspoon lime zest
3 cloves garlic, minced
2 tablespoons olive oil
1 tablespoon soy sauce
1/2 teaspoon salt
1/4 teaspoon black pepper
3 cups cooked white or brown rice
2 ripe avocados, sliced
1 cup cherry tomatoes, halved
1 cup corn kernels
1/4 cup red onion, sliced
3 tablespoons fresh cilantro, chopped
1/2 cup Greek yogurt (optional)
1/2 teaspoon chili flakes (optional)


Instructions

  1. In a bowl, whisk honey, lime juice, lime zest, garlic, soy sauce, olive oil, salt, and pepper.
  2. Add chicken to the bowl and marinate for 10–15 minutes to infuse flavor.
  3. Heat a skillet over medium heat and cook chicken for 5–7 minutes per side until golden and fully cooked.
  4. Remove chicken from the skillet and let it rest for 5 minutes, then slice into strips.
  5. Prepare four bowls with warm rice as the base.
  6. Arrange the sliced chicken strips over the rice.
  7. Add avocado slices, cherry tomatoes, corn, and red onion to each bowl.
  8. Top with fresh cilantro, a dollop of Greek yogurt, and chili flakes if desired.
  9. Serve immediately while the chicken and rice are warm.

Notes

  • For extra flavor, use cilantro lime rice as your base.
  • To prevent avocado from browning, squeeze a little extra lime juice over the slices.
  • The chicken can also be grilled for a smoky finish.
