Description

A creamy, cheesy, and incredibly satisfying baked casserole made with lean ground turkey and fresh spinach. This high-protein, low-carb dinner is easy to make, perfect for meal prep, and a guaranteed family favorite.


Ingredients

1 lb ground turkey (lean)
4 oz cream cheese, softened
5 oz fresh spinach, chopped or whole
1 cup cheddar cheese, freshly shredded
1 egg
½ tsp garlic powder
¼ tsp salt
Black pepper, to taste
Optional: ½ cup diced red bell peppers
Optional: ¼ cup plain Greek yogurt
Optional: mozzarella instead of cheddar


Instructions

  1. Preheat oven to 375°F and grease a 9×9 baking dish.
  2. Cook ground turkey in a skillet over medium heat for 6-8 minutes, breaking it up as it cooks.
  3. Stir in garlic powder, salt, and pepper. Add spinach and cook until wilted, about 2-3 minutes.
  4. Reduce heat to low and stir in softened cream cheese until fully melted and combined.
  5. Let mixture cool for 5 minutes, then stir in beaten egg and ½ cup cheddar cheese.
  6. Transfer mixture to prepared baking dish and top with remaining ½ cup cheddar.
  7. Bake uncovered for 20-25 minutes until bubbly and golden on top.
  8. Let rest for 10 minutes before slicing and serving.

Notes

  • Letting the mixture cool before adding the egg prevents scrambling.
  • For a crispier top, broil for the final 1-2 minutes of baking (watch closely!).
  • Leftovers store well in the fridge for up to 4 days.
  • Ground chicken can be used as a substitute for turkey.
