Description

Juicy baked chicken marinated in lemon and oregano, topped with creamy feta and fresh herbs. A healthy, flavor-packed Mediterranean meal ready in under an hour.


Ingredients

2 lbs boneless, skinless chicken breasts or thighs
⅓ cup extra virgin olive oil
Juice of 2 large lemons (about ⅓ cup)
4 cloves garlic, minced
1 tbsp dried oregano
1 tsp paprika
1 tsp salt
½ tsp black pepper
1 lemon, thinly sliced
68 oz Greek feta cheese, crumbled
2 tbsp fresh dill or parsley, chopped


Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, whisk together olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper to make the marinade.
  3. Add chicken to the bowl and toss to coat thoroughly. Let marinate at room temp for 20-30 mins.
  4. Transfer chicken and all marinade juices to a baking dish. Scatter lemon slices around the chicken.
  5. Bake for 20-25 minutes, or until chicken internal temperature reaches 165°F (74°C).
  6. Remove from oven and immediately crumble feta cheese over the hot chicken.
  7. Garnish with chopped fresh dill or parsley. Serve immediately.
