2 lbs boneless, skinless chicken breasts or thighs
⅓ cup extra virgin olive oil
Juice of 2 large lemons (about ⅓ cup)
4 cloves garlic, minced
1 tbsp dried oregano
1 tsp paprika
1 tsp salt
½ tsp black pepper
1 lemon, thinly sliced
6–8 oz Greek feta cheese, crumbled
2 tbsp fresh dill or parsley, chopped
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, whisk together olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper to make the marinade.
- Add chicken to the bowl and toss to coat thoroughly. Let marinate at room temp for 20-30 mins.
- Transfer chicken and all marinade juices to a baking dish. Scatter lemon slices around the chicken.
- Bake for 20-25 minutes, or until chicken internal temperature reaches 165°F (74°C).
- Remove from oven and immediately crumble feta cheese over the hot chicken.
- Garnish with chopped fresh dill or parsley. Serve immediately.

- For deeper flavor, marinate chicken in the refrigerator for up to 4 hours.
- Use a meat thermometer to ensure perfect doneness without drying out the chicken.
