Ingredients

Scale

1 cup Plain Plant-Based Yogurt
2 tablespoons Olive Oil
2 tablespoons Fresh Lemon Juice
1 tablespoon Lemon Zest
3 cloves Garlic (minced)
2 teaspoons Dried Oregano
1 teaspoon Salt
1 teaspoon Black Pepper
1 teaspoon Ground Cumin (Optional)
1 pound Chicken Tenders
Fresh Parsley or Dill (Optional, for garnish)

Instructions

  1. In a bowl, whisk together yogurt, olive oil, lemon juice, zest, garlic, oregano, salt, pepper, and cumin until smooth.
  2. Place chicken tenders in a dish or bag, add marinade, and coat thoroughly. Refrigerate for at least 4 hours or overnight.
  3. Preheat oven to 400°F (200°C). Arrange marinated tenders on a lined baking sheet.
  4. Bake for 15-20 minutes until cooked through and golden. Garnish with fresh herbs and serve.
