Ingredients
2 lbs chicken tenders, thighs or breast
2 tbsp olive oil
1 stick plant-based butter
8–10 cloves garlic, minced
1/2 cup parmesan cheese, grated
1 tbsp chili-garlic sauce (or to taste)
2 teaspoons red pepper flakes
1/3 cup fresh parsley, minced
2 teaspoons paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon salt
1/2 teaspoon pepper
Instructions
- Prep the chicken: Pat chicken dry, toss with olive oil and dry spice rub (paprika, garlic powder, onion powder, salt, pepper). Thread onto soaked wooden or metal skewers.
- Make the sauce: Melt butter. Add minced garlic and cook 1 minute until fragrant. Remove from heat. Stir in grated parmesan and chili-garlic sauce until smooth.
- Bake: Preheat oven to 400°F. Place skewers on a lined baking sheet. Baste generously with sauce. Bake for 15-20 min, basting halfway, until chicken reaches 165°F internally.
Notes
- Soak wooden skewers for 30+ minutes to prevent burning.
- Use freshly grated parmesan for the smoothest melting sauce.
- Adjust chili-garlic sauce and red pepper flakes to control spice level.
- Chicken thigh meat stays juicier than breast for baking.
