Description

A zesty and creamy twist on the viral smash taco trend featuring ground chicken, tangy dill pickles, and a high-protein ranch sauce.


Ingredients

1 lb Ground Chicken
1 tsp Garlic Powder
1 tsp Paprika
1 tsp Salt
1 tsp Black Pepper
8 small Tortillas
1 cup Shredded Mozzarella or Jack Cheese
1/2 cup Chopped Dill Pickles
2 tbsp Pickle Brine
1 cup Shredded Cabbage
1/2 cup Cottage Cheese (for ranch sauce)
1 tbsp Ranch Seasoning


Instructions

  1. In a bowl, mix ground chicken with garlic powder, paprika, salt, black pepper, and pickle brine.
  2. Divide meat into 8 balls and spread one ball thinly onto each tortilla.
  3. Blend cottage cheese with ranch seasoning and a splash of lemon until smooth; set aside.
  4. Heat a skillet over medium heat and place tortilla meat-side down.
  5. Smash with a spatula and cook for 3-4 minutes until chicken is browned.
  6. Flip the taco, top with cheese, and cook until the tortilla is crisp and cheese is melted.
  7. Top with shredded cabbage, extra pickles, and the prepared ranch sauce.
