1 lb Ground Chicken
1 tsp Garlic Powder
1 tsp Paprika
1 tsp Salt
1 tsp Black Pepper
8 small Tortillas
1 cup Shredded Mozzarella or Jack Cheese
1/2 cup Chopped Dill Pickles
2 tbsp Pickle Brine
1 cup Shredded Cabbage
1/2 cup Cottage Cheese (for ranch sauce)
1 tbsp Ranch Seasoning
Instructions
- In a bowl, mix ground chicken with garlic powder, paprika, salt, black pepper, and pickle brine.
- Divide meat into 8 balls and spread one ball thinly onto each tortilla.
- Blend cottage cheese with ranch seasoning and a splash of lemon until smooth; set aside.
- Heat a skillet over medium heat and place tortilla meat-side down.
- Smash with a spatula and cook for 3-4 minutes until chicken is browned.
- Flip the taco, top with cheese, and cook until the tortilla is crisp and cheese is melted.
- Top with shredded cabbage, extra pickles, and the prepared ranch sauce.
