A quick and healthy 20-minute Chicken Caprese featuring juicy chicken breasts topped with melted mozzarella, fresh basil, and a sweet balsamic glaze.

4 chicken breasts (boneless and skinless)
1/2 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon Italian seasoning
1 tablespoon olive oil
1/4 cup balsamic vinegar
1 tablespoon brown sugar
2 cloves garlic (minced)
1 cup cherry tomatoes (halved)
2 tablespoons basil (sliced)
4 slices mozzarella cheese
Instructions
- Season the chicken with salt, pepper, and Italian seasoning.
- Heat oil over medium-high heat in a cooking pan and cook the chicken until golden. Transfer to a plate and set aside.
- Add the balsamic vinegar to the pan, along with the sugar and garlic, and cook for 1-2 minutes.
- Add tomatoes and cook them for 5 minutes then add the basil and cook for another minute.
- Return the chicken to the pan and top it with mozzarella slices.
- Cover the pan with a lid and cook until the cheese melts over the chicken.
- Spoon some of the sauce over the chicken and serve with some fresh basil leaves.
Notes
- Use fresh mozzarella for the best melting properties.
- Don’t skip the cover on the pan; it is essential for melting the cheese without overcooking the chicken.
