Description

An easy baked chicken dinner with a sweet pineapple and brown sugar glaze balanced by savory soy sauce, garlic, and ginger. A perfect sweet and savory family meal.


Ingredients

4 boneless, skinless chicken breasts or thighs
1 cup pineapple chunks (fresh or canned in juice)
½ cup brown sugar
¼ cup soy sauce
2 cloves garlic, minced
1 tbsp fresh ginger, grated
2 tbsp olive oil
½ tsp chili flakes (optional)
2 tbsp lime juice
Salt and pepper to taste
Fresh cilantro for garnish


Instructions

  1. Pat chicken dry. In a bowl, whisk brown sugar, soy sauce, garlic, ginger, oil, chili flakes (if using), and lime juice.
  2. Place chicken and pineapple in a dish/bag. Pour most of marinade over, reserving some. Marinate 30 min+.
  3. Preheat oven to 375°F (190°C). Arrange chicken and pineapple in a greased baking dish. Pour dish marinade over.
  4. Bake for 25-30 min. Baste with reserved marinade. Bake 10-15 more min until chicken reaches 165°F.
  5. Rest 5 min. Garnish with cilantro. Serve with rice.

Notes

  • For a thicker glaze, simmer reserved marinade in a saucepan for 5 minutes while chicken bakes.
  • Chicken thighs are more forgiving and juicier.
  • Use low-sodium soy sauce to control salt content.
  • For grilling: Cook 6-8 min per side, basting often.
