Description

A smoky and savory one-pan meal featuring roasted sweet potatoes, protein-packed chicken, and melted cheddar cheese.


Ingredients

3 large sweet potatoes, cubed
2 cups cooked chicken, shredded
1/2 cup BBQ sauce
1 red onion, diced
1 cup corn
1/2 cup shredded cheddar cheese
2 tbsp olive oil
1 tsp smoked paprika
Salt and pepper to taste
Green onions for garnish


Instructions

  1. Toss sweet potatoes with oil and spices, cook until tender (approx 20 mins).
  2. Add red onion and corn, cooking until softened.
  3. Stir in the cooked chicken and BBQ sauce until well coated.
  4. Sprinkle with cheese and bake or broil until bubbly.
