3 large sweet potatoes, cubed
2 cups cooked chicken, shredded
1/2 cup BBQ sauce
1 red onion, diced
1 cup corn
1/2 cup shredded cheddar cheese
2 tbsp olive oil
1 tsp smoked paprika
Salt and pepper to taste
Green onions for garnish
Instructions
- Toss sweet potatoes with oil and spices, cook until tender (approx 20 mins).
- Add red onion and corn, cooking until softened.
- Stir in the cooked chicken and BBQ sauce until well coated.
- Sprinkle with cheese and bake or broil until bubbly.
- Garnish with green onions and serve.
