Description

A quick and easy baked flatbread topped with smoky barbecue chicken, melted cheese, and fresh garnishes, ready in just over 20 minutes.


Ingredients

2 flatbreads or naan (store-bought or homemade)
1 cup cooked shredded chicken (rotisserie chicken works best)
½ cup BBQ sauce (plus extra for drizzling)
1 cup shredded mozzarella cheese
½ cup shredded sharp cheddar cheese
¼ cup thinly sliced red onion
2 tablespoons chopped fresh cilantro (or parsley)
1 tablespoon olive oil or garlic butter (optional, for brushing base)
pickled jalapeños, plant-based protein crumble, crispy fried onions (optional)


Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a bowl, mix shredded chicken with ½ cup BBQ sauce until coated.
  3. Place flatbreads on a baking sheet. Optionally brush with olive oil or garlic butter.
  4. Sprinkle half the cheese blend on each flatbread. Top with saucy chicken, then remaining cheese.
  5. Bake for 10-12 minutes until cheese is melted and bubbly and edges are crisp.
  6. Remove from oven, garnish with red onion, cilantro, and optional toppings. Drizzle with extra BBQ sauce, slice, and serve.

Notes

  • For a crispier base, pre-bake plain flatbread for 3-4 minutes before adding toppings.
  • Leftovers reheat best in a toaster oven or air fryer.
