Description

Succulent chicken strips and vibrant bell peppers seasoned to perfection and cooked fast in the air fryer for a healthy Tex-Mex dinner.

2 boneless skinless chicken breasts (cut into strips)
1 red bell pepper (cut into 1/4′ slices)
1 yellow bell pepper (cut into 1/4′ slices)
1 green bell pepper (cut into 1/4′ slices)
1/2 yellow onion (cut into 1/4′ slices)
2 tsp chili powder
1 tsp paprika
1/2 tsp cumin
1 tsp onion powder
1 tsp garlic powder
1 tsp salt
1/2 tsp black pepper
Tortillas
Sour cream
Guacamole


Instructions

  1. In a small bowl, mix the chili powder, paprika, cumin, onion powder, garlic powder, salt, and black pepper with a fork to create the seasoning.
  2. Place chicken, onions, and all bell peppers in a large mixing bowl; drizzle with olive oil and toss to coat.
  3. Add the spice mixture to the bowl and toss again until the chicken and vegetables are evenly seasoned.
  4. Transfer the mixture to the air fryer basket.
  5. Cook at 350 F for 16 to 20 minutes, ensuring you toss the basket at the 9-minute mark to ensure even cooking.
  6. Check that the chicken is cooked through, then serve in warm tortillas with sour cream and guacamole.

Notes

  • For extra flavor, squeeze fresh lime juice over the chicken immediately after cooking.
  • If using frozen peppers, ensure they are fully thawed and patted dry to avoid excess moisture.
